Yesterday: High: 97, Low: 76, no rain (of course)
So I happened upon an article at Slashfood which discussed purslane. Now I had been reading about how purslane is eaten all over the world, really healthy stuff. But about the only other thing I knew about it was that it was some kind of greens. Imagine my surprise when I actually saw the picture of it at the top of the article.
Holy . . . No WAY!
THAT’S the mythical purslane???? But I have that ALL OVER my garden! Red stems, check . . . succulent-like leaves, check . . . pretty yellow flowers, check . . .yeah, I got an infestation of purslane!
Okay, so it is completely edible. But what do you do with it? Add it to salads, add it to stews (mucilaginous? Like okra? yuck!), add it to pesto? Hmmm, now that has possibilities! Afterall, my basil plant is leaving a lot to be desired in the leaf department right now.
